Description
Pozol is a traditional Mesoamerican fermented corn beverage produced by spontaneous lactic acid and yeast fermentation of masa at ambient temperatures.
Technical
During fermentation, lactic acid bacteria such as Lactobacillus plantarum and Pediococcus pentosaceus convert fermentable sugars into lactic acid, while Saccharomyces cerevisiae produces ethanol and volatile aroma compounds. The combined metabolic activities lower the pH to 4.5–5.5 and generate a characteristic sour, yeasty flavor profile.
