Historical Chinese salt production combined solar evaporation with controlled boiling to concentrate brine and precipitate NaCl crystals.
Technical
The process relied on the NaCl solubility curve, with saturation at ~35 % w/w at 30 °C and ~39 % w/w at 100 °C. By evaporating brine in shallow ponds and then boiling at 100 °C, salt makers reduced water content and promoted crystal growth. Ash addition lowered water activity, aiding purification and removing impurities.
