Heat onions and garlic in oil until lightly browned. Add curry paste (curry powder, tomato paste and water). Brown for 2 to 3 minutes; add chicken cubes and cook over medium heat for 10 to 15 minutes. If this mixture sticks, add 2 tablespoons of oil more. Season to taste. Simmer over medium heat for another 15 minutes. At this point, add cubed potatoes or any other vegetable with 1 to 1 1/2 cups of water. Simmer for another 30 minutes until the meat is cooked throughout and the vegetables are soft. Serve with rice. Serves 3 to 4 people.
