Heat oven 325 F. Get a loaf pan (or a regular pan) ready, oil or butter the sides. Mince bananas well, then add melted butter and eggs, beating well. In a separate bowl, mix sugar, rice flour, soda, salt and walnuts. Slowly mix the dry ingredients into the wet, then spread into the loaf pan. Bake for 40 - 45 mins at 325F. Turn the heat off and leave it in the oven for 5 minutes. Test it with a toothpick -- if it comes out clean, it's done.
