Drag out the biggest roaster pan you have - the kind you cook a 20-lb turkey in. You can also get one of the aluminum "disposable" ones from the grocery store and use it over and over. I did that for years, and it works fine. Into this pan first put the dry ingredients and mix well. I usually use two big flat wooden spatulas and employ a sort of a tossing / scooping motion to get everything mixed thoroughly. After the dry ingredients have been mixed, add the canola oil and the honey, in that order. Mix well after each addition. Bake in a 300° F oven for at least 2 1/2 hours, mixing the granola thoroughly every 20-30 minutes. Or you can cook at 250° F; it will take longer, but you can go about 45 minutes between mixings. When you mix it while cooking, be sure to get the more done portions from the sides into the center, and vice-versa. The goal is an even golden brown all through. When done, let the batch cool several hours or overnight, with a cotton dishtowel over it. Then mix it up again (it will be crunchy now) and add your choice of dried fruits, about 4 cups total. My usual is dried apples and raisins, but you can use craisins, apricots, figs - whatever turns you on! Store in freezer-proof containers; keep the "currently in use" in the fridge, freeze the remainder till ready to use. Do not store at room temperature.
