heat a large skillet or dutch oven over medium high heat. add italian sausage, onion and garlic. cook until sausage is brown and onion is tender. add tomatoes, roasted red peppers, sun-dried tomatoes, basil, red pepper, salt, pepper and sugar and bring to a low boil. reduce heat and simmer sauce for 30 minutes or until it is at your desired consistency, adding additional salt, sugar and red pepper to taste. while sauce is cooking, cook pasta according to package directions. toss cooked noodles with sauce (adding half at a time you want to make sure you have plenty of sauce), add feta cheese and toss to combine. serve with extra feta. enjoy!
