Trim fat and skin from ham. Place ham on rack in shallow roasting pan. Beat the egg until thick (about 5 minutes). Fold in the mustard; brush over the ham. Sprinkle with some pepper and 1/4 to 1/3 cup bread crumbs to coat. Bake in 325° oven 1 1/2 to 2 1/4 hours (meat thermometer should read 140°). Prepare Mustard Whip. Serve with sliced ham. Makes 16 to 24 servings.
