The alkaline ash (pH ≈ 10–11) hydrolyzes the cyanogenic glycoside linamarin to hydrogen cyanide, which is volatilized during the smoking phase. The controlled low temperature (30–40 °C) drives off residual cyanide and initiates Maillard reactions, imparting flavor while preventing starch gelatinization above 60 °C.
