Description
Papua New Guinea taro root fermentation is a spontaneous lactic‑acid and yeast fermentation conducted at ambient temperatures (25–30 °C) for 3–7 days in sealed baskets.
Technical
During fermentation, homofermentative lactic acid bacteria such as Lactobacillus plantarum convert starches to lactic acid, while heterofermentative yeasts like Saccharomyces cerevisiae produce ethanol and CO₂. The acidic environment (pH 3.8–4.5) inhibits spoilage organisms and reduces antinutrients such as oxalates and cyanogenic glycosides, enhancing mineral bioavailability.
