What You Need to Know
During fermentation, homofermentative lactic acid bacteria such as Lactobacillus plantarum convert starches to lactic acid, while heterofermentative yeasts like Saccharomyces cerevisiae produce ethanol and CO₂. The acidic environment (pH 3.8–4.5) inhibits spoilage organisms and reduces antinutrients such as oxalates and cyanogenic glycosides, enhancing mineral bioavailability.
The Science
Primary Reaction
Homofermentative lactic acid fermentation by Lactobacillus plantarum and heterofermentative yeast metabolism producing lactic acid, ethanol, and CO₂
