Technical
Thermal decomposition of cellulose (rice paper) or cinnamaldehyde-rich bark (Cinnamomum cassia) releases aromatic hydrocarbons and furans. Rapid combustion at 300–500°C generates smoke containing 2-furanmethanol and guaiacol.
Culinary Significance
