Peel, pit and cut peaches into bite-sized pieces; place half of peaches in chocolate crumb crust. In small bowl, beat at medium speed the cream until stiff peaks form. In large bowl prepare instant pudding as label directs, except use only 1 cup milk. Gently fold whipped cream and lemon extract into pudding mixture. Spoon over peaches; top with remaining peaches. Refrigerate and let pie set for 10 minutes. Serves 8.
