Instructions In a glass bowl, heat the sugar and the corn syrup in the microwave on high for 3 minutes, stir and heat for 2 more minutes. Add the peanuts, stir and heat for 3-5 minutes until the mixture is a golden brown color. Add the butter and vanilla. Stir until the butter is melted and microwave for one minute. Stir in the baking soda (the mixture will foam with this step.) I spread the mixture onto wax paper. Cool completely and then break into pieces. I suggest spraying your spatula/spoon before spreading the brittle.
