Lightly saute onion and butter. Mix all ingredients together, except tomatoes. Hollow out tomatoes, salt the inside of tomatoes and let drain upside down for about 1/2 hour. Place the spinach mixture inside tomatoes and mound on top. Bake at 350° for approximately 20 to 25 minutes. Do not overcook. Mixture can be made ahead.
