To create the dressing for this salad, mix the olive oil and vinegar (3 parts oil to 1 part vinegar) and salt and pepper to taste. Whisk in a small bowl (this is a great staple to have in the fridge for salads, so make extra and put it in a jar). Slice the avocados, oranges and red onions and layer on a dish or individual plates. Sprinkle with salt and pepper to taste and drizzle with dressing and voila!
