Pour warm water in a 2 qt. container (crock, glass, or plastic). Sprinkle yeast over water, stirring until dissolved. Beat in the flour and sugar with a wire whisk until smooth. Cover container with cheesecloth. Place in protected spot and leave until sponge begins to bubble, rises, and falls back. Stir with rubber spatula, replace cheesecloth and allow to bubble about 2 days. Stir thoroughly, label, place lid over cheesecloth and refrigerate.
