Preheat your oven to 350 degrees F and grease an 8x8-inch baking dish with cooking spray. In a bowl, stir together the flour, sugar, cinnamon, baking soda, baking powder, salt and nutmeg with a whisk. (This is your "box" mix. Yes, this is what you're paying the big bucks for.) In a small bowl, whisk together the two eggs. Add this to the dry ingredients along with the chopped apples, vanilla and walnuts. Now stir, stir, stir. Keep stirring until all the flour/sugar mixture begins to look wet and well combined. Pour the cake batter into the prepared baking dish and bake for 45 minutes. Allow to cool on a wire rack. For the glaze, melt the butter in a small sauce pan (do not use nonstick, you need to be able to see the butter change color.) Cook the butter for about a minute until brown particles form on the bottom of the pan. This can burn quickly, so once you see the brown specks form, remove it from the heat and pour it into your mixing bowl. Add the powdered sugar and cinnamon, then beat in about 2 tablespoons of milk.
