Combine lime zest, lime juice, sugar, cinnamon, cloves and 2 1/2 cups water in a medium saucepan. Stir over medium heat, without boiling, until sugar dissolves. Simmer, covered, for 20 mins. Add guavas to syrup and simmer, covered loosely, for about 10 mins, or until guavas are tender. Let cool in syrup. Once cool, remove guavas from syrup and transfer to a heatproof bowl. Strain syrup into a clean saucepan and discard cinnamon and cloves. Simmer for 10 mins, or until reduced to 1 1/4 cups. Remove from heat and stir in vanilla. Pour over guavas and set aside until cool. Cover and chill. Serve guavas and syrup cold.
