Dip pieces of chicken in melted butter, then in cheese and bread crumb mixture (with parsley and garlic mixed in). Place in baking dish and cover with Saran wrap. Cook in microwave on High for 7 minutes. Remove wrap and add leftover melted butter (1/4 cup), wine and scallions. Cover and heat for 5 minutes on High. (I serve it over rice.) Serves 3 to 4.
