for the steaks, preheat oven to 400 degrees f. mix together chipotle peppers in sauce with softened butter. set aside. mix together chipotle chili, salt and pepper. rub on both sides of the steak. heat the olive oil in an oven-safe skillet. cook the steak on both side for 4 minutes. then place the steak in the skillet into the oven for another 5 minutes. remove the skillet from the oven and transfer the steak on a plate. allow to sit for 3-4 minutes before serving. for the frizzled onions, slice the shallot super thin. let them soak in the milk for 5 minutes. stir salt and pepper into a bowl with the flour. heat vegetable oil in a skillet. remove onions from the milk and dip in flour, then place in the skillet. cook onions until golden. remove and allow to drain on a paper towel. to serve, spoon 1 tablespoon of chipotle butter on the steak, then top with a handful of frizzled onions.
