Technical
During soaking, endogenous amylases hydrolyze starches into fermentable sugars. Native yeasts such as Saccharomyces cerevisiae and Candida spp. convert glucose to ethanol, while lactic acid bacteria like Lactobacillus plantarum and Pediococcus pentosaceus ferment sugars to lactic acid, lowering pH and preserving the product.
