Technical
Collagen denaturation occurs at 150–200 °C, breaking down the protein matrix and releasing amino acids and peptides that enhance umami. The marrow fat, composed of triglycerides, melts at around 37–40 °C, allowing it to be drawn out while the bone matrix remains intact.
