Technical
The molinillo's rapid rotation creates shear forces that disperse gas bubbles while simultaneously extracting surface-active compounds from cacao and maize that stabilize the foam. Saponins from cacao and proteins from nixtamalized corn form a viscoelastic interface at air-liquid boundaries.
