Technical
During fermentation, Saccharomyces cerevisiae hydrolyzes sucrose into glucose and fructose, which are then metabolized to ethanol and CO₂. Lactic acid bacteria such as Lactobacillus plantarum further reduce the pH by producing lactic acid, stabilizing the product and influencing flavor.
