Technical
Charcoal combustion produces high temperatures (600‑800 °C) but the grill surface stabilises at 150‑250 °C, ideal for Maillard browning above ~140 °C. The Maillard reaction between protein amino acids and reducing sugars generates melanoidins and volatile heterocyclic compounds that give the browned crust and smoky aroma. Incomplete combustion can produce polycyclic aromatic hydrocarbons (PAHs), which are minimized by maintaining 2‑4 % oxygen airflow.
