During smoking, volatile phenolic aldehydes and lactones are sublimated at 120–140 °C and adsorb onto the crystal surface. The low moisture content (<5 %) prevents dissolution, while rapid cooling preserves crystallinity, resulting in a sweet, smoky crystalline product.
