The NaCl in the brine disrupts protein–water interactions, increasing water retention, while sodium nitrite reacts with myoglobin to form nitrosyl heme complexes that stabilize color and inhibit Clostridium botulinum. The process also preserves enzymatic activity at 4–10 °C and prevents oxidation with additives such as sodium erythorbate.
