Technical
During drying, water is removed by evaporation at ambient 20–30 °C, lowering water activity below 0.6 to inhibit microbial growth. Rehydration at ≤15 °C allows polysaccharides such as alginate and laminarin to swell, releasing bound minerals (iodine, potassium) while preserving fucoidan integrity and antioxidant activity.
