Seal oil rendering is the process of melting seal fat to separate pure oil for culinary use.
Technical
During rendering, triglycerides in seal fat melt and coalesce, allowing the oil to rise above the solid connective tissue. The process may induce limited hydrolysis, releasing free fatty acids such as EPA and DHA, while glycerol remains in the residual solids. Controlled temperatures preserve the unsaturated fatty acids and prevent oxidation.
