Acetic acid at 5‑7 % lowers the pH below 4.6, denaturing microbial enzymes and creating an environment hostile to spoilage bacteria, yeasts, and molds. Heat treatment of the brine (≥80 °C for 5 min) dissolves salt and sugar and achieves commercial sterility, while rapid cooling to ≤4 °C limits endogenous enzyme activity. The resulting acidic medium preserves crisp texture and allows for cultural spice variations.
