In brine pickling, lactic acid bacteria ferment sugars to lactic acid, reducing pH to 4.6–4.8 within 24–48 h at 5–10 °C, while vinegar pickling adds 5–20 % acetic acid, achieving pH < 4.0 in minutes. The salt concentration (6–8 % NaCl) creates osmotic pressure that inhibits spoilage microbes and allows LAB to thrive, whereas acetic acid is bacteriostatic to most spoilage organisms. The resulting acidity, texture, and flavor are shaped by temperature, time, and concentration.
