Description
Mazamorra de Maíz is a traditional Andean maize porridge whose texture and flavor are controlled by starch gelatinization, retrogradation, and mild fermentation.
Technical
During cooking, the 70–75 % starch maize kernels gelatinize between 60–70 °C, forming a viscous matrix. Raising the temperature to 80–90 °C for 30–45 min promotes amylopectin retrogradation, increasing viscosity and body. A 12–24 h fermentation at 30–35 °C generates lactic acid, lowering the pH to 4.5–5.0, which enhances flavor and shelf‑life.
