Description
Traditional Hopi method that sun‑dries corn and beans to preserve them for winter.
Technical
Solar radiation heats the kernels, causing water to evaporate and the moisture content to fall below 10 %. The combined effects of low temperature, reduced water activity, and UV‑induced denaturation of surface enzymes inhibit microbial growth and mold spore viability. The process concentrates carbohydrates and preserves native nutrients without significant thermal degradation.
