Earth‑oven (huatia) cooking of potatoes is a low‑tech thermal method that uses an insulated earth pit to slowly raise core temperatures to 95–105 °C over 1.5–3 h.
Technical
During cooking, starch granules gelatinize between 60–70 °C, swelling and forming a viscous matrix that softens the tuber. Proteins denature, and at the surface temperatures above 140 °C Maillard reactions produce melanoidins, giving a caramelized crust.
