Description
Dry‑curing fish in salt‑cured wood preserves Alaskan Yup’ik fish by reducing water activity and adding phenolic antimicrobials.
Technical
The high salt concentration draws out water, lowering the water activity below 0.85 and creating an acidic environment (pH ~5–5.5). Phenolic compounds from cured cedar or spruce, such as eugenol and syringol, inhibit spoilage bacteria and fungi. Together, these chemical changes stabilize the protein matrix and develop a characteristic flavor.
