Technical
During fermentation, lactic acid bacteria such as Lactobacillus plantarum and yeasts like Saccharomyces cerevisiae metabolize sugars to produce lactic acid, ethanol, and volatile pyrazines. The resulting acidification lowers the pH from ~6.5–7.0 to 4.5–5.0, inhibiting spoilage organisms while promoting desirable microbes and releasing phenolic antioxidants.
