During extrusion, the protein ink undergoes shear‑thinning, allowing flow through the nozzle. The nozzle temperature (70–180 °C) induces partial denaturation and rapid gelation, while the chilled bed (≈4 °C) solidifies the material within seconds, locking the shape. Controlled cooling rates (≤5 °C s⁻¹) prevent sagging and enhance layer adhesion.
