The process relies on the diffusion of flavor molecules through a polymer matrix (gelatin or carrageenan) that is kept viscous enough for extrusion yet permeable to volatiles. Heating the ink to 70 °C dissolves umami enhancers (MSG, IMP) into the gel, while cooling to 35 °C locks them into a stable network. At room temperature, the molecules migrate through the matrix over 30–60 min, producing a gradient of flavor intensity.
