ABSTRACT The ancient cereal grain known as proso millet ( Panicum miliaceum L.) is receiving more attention due to its remarkable nutritional value and health benefits. Rich in important amino acids, minerals, antioxidants, and naturally gluten‐free dietary fiber, it promotes heart‐healthy, low‐glycemic diets. Despite these advantages, its integration into mainstream food markets has been limited. However, its comeback has been sparked by growing health consciousness and the need for functional and gluten‐free cuisine.
