Abstract
As global population growth, climate change, and resource constraints increasingly challenge food security, food science must evolve through technological innovation and interdisciplinary collaboration. This chapter explores the transformative potential of emerging trends such as smart agriculture, nutrigenomics, functional food development, and sustainable packaging. It highlights advancements in non-thermal processing technologies—such as high-pressure processing, cold plasma, and pulsed electric fields—that preserve food quality and safety while minimizing environmental impact. Nutrigenomics offers a path to improved livestock productivity through targeted nutritional strategies. Consumer preferences are shifting toward plant-based, health-conscious, and ethically sourced foods, prompti
