Abstract
Modern food systems are confronted with the critical challenge of delivering safe, nutritious, and high-quality foods while ensuring extended shelf stability to meet the needs of a rapidly growing global population. Conventional food processing methods, including thermal treatments and chemical preservation, have played a vital role in ensuring microbial safety; however, they often lead to significant losses of heat-sensitive nutrients, degradation of bioactive compounds, and undesirable changes in sensory attributes.
