Abstract
The modern food industry is undergoing a digital transformation, driven by the need for improved quality control, sustainability, and operational efficiency. Traditional methods of food analysis, while reliable, are often time-consuming, costly, and environmentally damaging. This chapter explores the integration of near-infrared (NIR) spectroscopy with artificial intelligence (AI) as a transformative solution for intelligent food automation. NIR provides rapid, non-destructive and reagent-free analysis, while AI enables advanced data interpretation, predictive modeling and real-time decision-making.
