Abstract
In an era of increased food demand and the severe challenge of lessening food waste, this chapter explores the role of nanotechnology as a key solution in food preservation, specifically fruits and vegetables. The chapter offers an in-depth analysis of several nanomaterials, such as silver and gold nanoparticles, nano-fibres, and nanoemulsions. It scrutinizes their unique modes of action and applications in enhancing the shelf life and quality of short-lived and perishable food products. This investigation extends beyond the industrial and technological aspects of food preservation, delving deeper into the regulatory terrain that supervises the use of nanotechnology in food preservation. It emphasizes the prerequisite of adhering to ethical considerations and safety standards, emphasizing
