Abstract
A global increase in population leads to an increased demand in food production. This demand must be met while addressing the challenge of minimizing environmental damage and ensuring the smooth operation of sustainable food systems. A potential contributor to addressing this challenge lies in the successful development, uptake, and roll out of new technologies within the food industry. Considerable investment and research has been focused on the development of nonthermal technologies, whereby food is processed at refrigeration or near room temperatures and where the nutritional and sensory characteristics are protected.
