Advances in Extrusion Technologies

Abstract
Extrusion technology has a great impact on the food industry with its numerous benefits over other processing methods. Different products from various food groups can be prepared by modifying minor or major ingredients and processing conditions using extrusion technology. The recent advances in extrusion technology have made it possible to control the process parameters so as to achieve the desired characteristics of the final product. This technology has been used to produce numerous products like breakfast cereals, savory snacks, pre-cooked flours, cereal-based baby food and textural proteins. It is a very practical and economical processing method to manufacture diverse types of food products with high consumer acceptability.
