Pat both sides of the chicken breasts, salt and pepper each side and bake in the oven till the juices run clear, 350 degrees F for about 30 minutes. The chicken will also continue to bake in the oven with the rest of the ingredients later. Mix cream of chicken soup and sour cream together. Pour over shredded, cooked chicken and mix that up. Pour it in to a 9x13 inch greased baking dish and sprinkle the top with the shredded cheese. In another bowl mix the crushed crackers with the melted butter and poppy seeds and spread on top. Bake at 350 degrees F for 2530 minutes. Serve over rice.
