Working with a quarter of the chocolate mixture at a time (keeping remaining refrigerated), roll rounded teaspoons into balls. Place on parchment paper-lined tray. Refrigerate until firm. Working quickly, rolls balls in melted chocolate. Place on lined tray. Refrigerate truffles until firm.
