Peel eggplant and cut into cubes. Cook in boiling, salted water until tender (15 to 20 minutes). Drain; mash with fork. Brown meat in 3 tablespoons margarine. Add onion and pepper and cook until tender. Stir in eggplant, rice, salt and pepper. Spoon into a 10 x 6 x 2-inch baking dish. Saute bread crumbs in remaining 2 tablespoons margarine. Sprinkle over eggplant mixture. Bake at 375° for 20 minutes. Makes 4 to 6 servings.
