Preheat oven to 375F. Grease and flour a 9x5" loaf pan. In a large bowl, cream together butter and sugar. Add eggs, buttermilk, vanilla and apples. Mix well. Sift together flour, baking powder, baking soda and salt. Combine with wet ingredients. Pour into prepared pan. Top with nuts. Bake about 50 minutes until bread tests done. Remove from pan and cool on wire rack.
