Prepare the ribs, cut it into pieces and place them in a bowl. Apart, mix ground pepper, white wine, orange and lemon juices, garlic, bay leaf and season with salt and pepper. Stir this mixture to the ribs, mix well and marinate for 1 hour. Turn the oven to 170°C (338°F). Prepare the ribs in an oven tray with half the marinade, baste it with olive oil and leave it on the oven for 15 minutes. Peel and wash the potatoes, cut them into quarters, add them to the ribs, add salt and pepper, wrap and cook for 30 minutes, stirring occasionally. If necessary, go basting with the rest of the marinade. When cooked, remove from the oven and serve sprinkled with parsley.
